Lemon, Macadamia and Cashew Bliss Balls

These are very easy and quick to make and need minimal ingredients. Take a couple to work and enjoy as a snack. I know my husband loves them (and his colleagues look on in envy). Enjoy ๐Ÿ˜‰

Ingredients 

1 cup macadamias

1 cup cashews

1 cup desiccated coconut

2tbls coconut oil

3 drops Lemon Essential Oil (it comes from the zest)

juice of half a lemon

1/2 teaspoon natural vanilla extract

pinch of salt

10 dates

extra desiccated coconut for rolling in

*(You can also use the lemon zest If donโ€™t have the Lemon Essential oil).

Instructions

  1. Place the dates first into your food processor and blend until it becomes like a paste.
  2. Place the remaining ingredients into your processor and blend until all combined.
  3. Roll the balls in the extra coconut and place in the fridge to set.

Serve. Eat. Enjoy!
